Ingredients
- Chicken Egg 2 pieces
- Wheat Flour 0 oz
- Potato protein 0 oz
- Irish Whiskey 2 tablespoons
- Bananas 3 pieces
- Meyer Lemon Juice 1 tablespoon
- Apple 2 pieces
- Water 1 tablespoon
- Cream (40%) 15 fl oz
- Vanilla salt a pinch
- Milk 10 fl oz
- Powdered Sugar 2 tablespoons
- Sugar 5 oz
- Cocoa Powder 0 oz
- Gelatin 0 oz
- White Chocolate 0 oz
Step-by-Step Guide
Step 1
1. Biscuit: Whip the egg whites until stiff peaks form. Gradually add sugar while continuing to whip. Add the egg yolks. Turn off the mixer, sift in the flour and starch. Fold gently with a spatula, pour the batter into a mold, and bake.

2. Banana Mousse: Place the bananas and apples in a blender and puree. Add powdered sugar and warm gelatin.

3. Place the biscuit in a frame, soak it, and spread the banana mousse on top. Chill for 30 minutes.

4. Cream Mousse: Whip the cream until fluffy. Add powdered sugar, vanilla, and warm gelatin. Pour over the banana mousse. Place in the refrigerator to cool.

5. Mirror Glaze: In a small saucepan with a thick bottom, pour in the milk, sugar, and mix well. Bring to a boil over high heat. Add cocoa and whisk well, then remove from heat. Stir very slowly to remove all air.
Step 6
6. Pour gelatin into the milk, wait until it absorbs water and swells. Transfer it to the glaze. It should dissolve completely. Cool the mixture to 24°C. Pour over the cake through a sieve.

7. Melt the white chocolate in a double boiler, transfer to a piping bag, and drizzle a web of white chocolate over the glaze.

8. You can leave it as a cake or cut it into pastries, round or rectangular shapes as desired.
