Banana Muffins with White Chocolate
Ingredients
- Butter 2 tablespoons
- Honey 2 tablespoons
- Vanilla extract ½ teaspoon
- Wheat Flour 1 cup
- Bananas 2 pieces
- Baking Powder 1 teaspoon
- Ground Cinnamon ½ teaspoon
- Activated Baking Soda ½ teaspoon
- Salt a pinch
- Mini Chocolate Chips 5 oz
Step-by-Step Guide
Step 1
Preheat the oven to 355°F.
Step 2
In a saucepan over low heat, combine the butter, honey, and vanilla until smooth. Remove from heat and let sit for a few minutes.

In a bowl, mash the peeled bananas into a puree. In another bowl, sift together the flour, baking powder, baking soda, cinnamon, and salt.
Step 4
Mix the butter mixture with the banana puree, then gradually fold in the dry ingredients. Stir gently (do not beat). Fold in the chocolate chips.
Step 5
Place paper liners in a muffin tin. Fill the cups with batter up to ⅔ full.
Step 6
Bake for about 25 minutes until done. Cool for 5 minutes in the pan, then remove and let cool.
