Ingredients
- Butter 5 oz
- Sugar 0.6 cup
- Bananas 2 pieces
- Vanilla salt 1 teaspoon
- Large eggs 1 piece
- Coconut flakes 3 teaspoons
- Milk 0.3 cup
- Baking Powder 1½ teaspoons
- Salt ½ teaspoon
- Wheat Flour 1 cup
- Activated Baking Soda ½ teaspoon
- Wheat Flour 1 cup
- Mini Chocolate Chips 5 oz
- Roasted Peanuts 5 oz
Step-by-Step Guide
Step 1
Preheat the oven to 355°F. Grease a muffin tin or place paper liners in each cup.
Step 2
In a blender, puree the bananas until you have 1 cup.
Step 3
In a small bowl, beat the softened butter with sugar using a mixer until creamy.
Step 4
Then add the banana puree, egg, vanilla, coconut flakes, and milk. Mix well.
Step 5
Gradually add the baking powder, baking soda, salt, and both flours. Mix well.
Step 6
Add the chocolate chips and slightly crushed walnuts.
Step 7
Divide the batter into the muffin cups and bake for 20-25 minutes until done, checking with a toothpick.
Step 8
Let cool slightly in the pan and then transfer to a wire rack.
