Banana ice cream with chocolate and walnuts
Ingredients
- 10% cream 15 fl oz
- Sugar 5 oz
- Egg white 5 pieces
- Bananas 3 pieces
- Walnuts 5 oz
- Chocolate 5 oz
Step-by-Step Guide
Step 1
Whisk the yolks with sugar using a mixer for 1-2 minutes.
Step 2
Add the cream and whip a little more until the ingredients are well combined.
Step 3
Pour the mixture into a bowl or saucepan and place it over a water bath. Cook for 10-15 minutes, stirring regularly with a spatula and not allowing the mixture to boil. If it gets too hot, remove the bowl from the water bath for 30 seconds or add a couple of tablespoons of cold milk or cream to the mixture.
Step 4
Remove from heat and place the bowl with the egg-cream mixture in cold water. Cool for a couple of minutes, stirring. Add the banana pieces and whip again (to a homogeneous state, but leaving small chunks).
Step 5
Fold in the walnuts (chopped coarsely; can be toasted beforehand) and the chocolate (also in fairly large pieces).
Step 6
Pour into a freezer-safe container and place in the freezer until ready. It is advisable to stir the ice cream a couple of times.
