Banana Carrot Cake
Ingredients
- Bananas 2 pieces
- Carrot 1 piece
- Dates 4 pieces
- Oat flakes 1 cup
- Bran 2 tablespoons
- Coconut Milk 2 tablespoons
- Cherry 0 oz
- Cinnamon to taste
- Cardamom to taste
- Salt a pinch
- Walnuts 0 oz
Step-by-Step Guide
Step 1
Preheat the oven to 355°F.
Step 2
Blend half of the oat flakes into flour using a blender.
Step 3
Blend one and a half bananas, dates, salt, and oil (optional, but adds a pleasant aroma and density) into a homogeneous mass. Add spices.
Step 4
Grate the carrot on a fine grater (you can use the pulp from making juice).
Step 5
Mix the oat flakes, flour from the flakes, bran, banana mixture, and carrot. Add halved cherries (frozen ones are fine) and chopped walnuts.
Step 6
Place in a baking dish lined with parchment paper, in a layer of 3–4 cm. Bake for 50 minutes. Allow to cool completely in the dish. The cake is quite moist and can break if hot.
