Ingredients
- Bananas 4 pieces
- Walnuts 5 oz
- Baking Powder 1 teaspoon
- Ground Cinnamon 1 teaspoon
- Wheat Flour 5 oz
- Unbleached flour crackers 5 oz
- Oranges 1 piece
- Lemon 1 piece
- Butter 5 oz
- Brown Sugar 5 oz
- Farm fresh eggs 2 pieces
- Demerara Sugar 1 tablespoon
- Salt a pinch
Step-by-Step Guide
Step 1
Grate the zest of one orange and one lemon.
Step 2
Toast the walnuts at 355°F for 7–9 minutes. Let cool and chop.
Step 3
Peel the bananas, mash three of them, and chop the fourth.
Step 4
In a bowl, sift together salt, baking powder, cinnamon, and flours. Add the grated zest of the orange and lemon, butter, eggs, banana puree, and mix well. Fold in the banana pieces and walnuts.
Step 5
Pour the batter into a buttered loaf pan, smooth the top, and sprinkle with demerara sugar.
Step 6
Bake at 355°F for 1.5 hours, until the bread is firm. Let sit for 5 minutes before serving.
