Baklava with Honey-Rose Syrup

Ingredients

  • Chopped almonds 5 oz
  • Grated Chocolate 5 oz
  • Ground Cinnamon ½ teaspoon
  • Ground Nutmeg ¼ teaspoon
  • Phyllo Dough 10 oz
  • Clarified Butter 5 oz
  • Powdered Sugar 5 oz
  • Honey 5 oz
  • Lemon 1 piece
  • Water 6 tablespoons
  • Rose water 3 teaspoons

Step-by-Step Guide

Step 1

Toast the nuts over medium heat until golden brown, then add the spices and 75 g of powdered sugar and mix well.

Step 2

Lay out the phyllo dough and cut it into rectangles approximately 18 by 28 cm. Line a baking tray with parchment paper greased with butter.

Step 3

Take a portion of the phyllo sheets and, brushing each with clarified butter, layer them in the baking tray. Then spread the toasted nuts evenly on top, followed by a drizzle of honey. Layer the remaining sheets on top, also brushing each with clarified butter.

Step 4

Cut into small triangles or squares and bake in a preheated oven at 355°F for 30–35 minutes. If the dough browns too quickly, cover it with foil.

Step 5

While the baklava is baking, make the syrup by adding 100 g of honey, 75 g of powdered sugar, the zest and juice of one lemon to a pot with water (6 tablespoons), and heat until the honey dissolves. Then simmer for 3–4 minutes, after which add the rose water and stir.

Step 6

If necessary, you can reheat the syrup to pour over the baklava as soon as you take it out of the oven. After that, let the baklava soak in the syrup for 1 to 2 hours.
