Baked muesli with almonds, blueberries, and coconut milk
Ingredients
- Honey to taste
- Large Chicken Egg 1 piece
- Coconut Milk 15 fl oz
- Salt ¼ teaspoon
- Ground Cinnamon ½ teaspoon
- Oat flakes 10 oz
- Brown Sugar 0 oz
- Blueberries 5 oz
- Almond Flakes 1 tablespoon
- Greek Yogurt to taste
Step-by-Step Guide
Step 1
Preheat the oven to 190°C (375°F). Grease a 20 cm square baking dish with cooking spray.
Step 2
In a medium bowl, beat the egg until slightly frothy.
Step 3
Gradually add the coconut milk, honey, salt, and cinnamon, stirring constantly.
Step 4
In a large bowl, combine the oat flakes and sugar, then pour in the coconut mixture.
Step 5
Add the blueberries and almonds, and mix well.
Step 6
Evenly spread the mixture in the prepared dish and top with the remaining blueberries and almonds.
Step 7
Bake for 25-30 minutes or until the muesli is golden brown.
Step 8
Serve warm or at room temperature, drizzling with yogurt and honey if desired.
