Baked Chocolate Fondant
Ingredients
- Egg white 2 pieces
- Whole egg 2 pieces
- Sugar 5 oz
- Butter 5 oz
- 70% Dark Chocolate 5 oz
- Wheat Flour 0 oz
Step-by-Step Guide
Step 1
Grease the inside of 6 metal rings (5 cm diameter, 4–5 cm height) with butter. Line each mold with non-stick parchment paper, extending it slightly above the rings. Place them on a baking sheet lined with parchment paper.
Step 2
In a bowl, whisk the eggs, then add the yolks and sugar, whisking again until smooth.
Step 3
Place the bowl over a pot of boiling water and melt the finely chopped chocolate and unsalted softened butter in the bowl. Remove the bowl from the pot and gently stir the chocolate. Let it cool for a minute or two, then pour the chocolate into the egg mixture while continuously stirring. Add the sifted flour and whisk well to avoid lumps. Chill for 30 minutes.
Step 4
Spoon the mixture into the metal rings, filling them about two-thirds full. Refrigerate for 3–4 hours.
Step 5
Preheat the oven to 355°F.
Step 6
Bake the fondants in the center of the oven for 10 minutes. Remove from the oven and let cool for 2 minutes, then carefully remove the rings and gently detach the fondants from the paper. Use a spatula to transfer the fondants to small plates, being careful not to shake them as they are very delicate. Serve immediately.
