Description

For baking, it is best to choose the largest apples. The larger they are, the more filling can fit inside, and they will remain more voluminous after baking.

  • Sugar 4 spoons
  • Cinnamon to taste
  • Dry Curd 5 oz
  • Fresh Berries 5 oz
  • Honey to taste
  • Nuts to taste
  • Powdered Sugar to taste
  • Fresh Mint to taste

Wash the apples and cut off the tops.

Using a teaspoon, scoop out the core of the apple. Remove all the seeds and carve out a hollow in the apple so that it resembles a bowl or cup.

Arrange the apples in a baking dish lined with parchment paper. Sprinkle them with sugar (half of the specified amount) and cinnamon. Place everything in an oven preheated to 340°F for 15–20 minutes. Keep an eye on the apples as they cook.

While the apples are baking, prepare the filling. Add the berries to the cottage cheese (if using frozen berries, be sure to thaw them first) along with the remaining sugar. Gently mix together, taking care to keep the berries whole.

Place a heaping spoonful of cottage cheese mixture into each apple. Bake in the oven preheated to the same temperature for 5–7 minutes. The indication that they are ready is when the cottage cheese is slightly browned but not darkened.

Transfer the cooked apples to a serving dish carefully, so that the juice from the apples does not spill. Cover each apple with a lid and let them cool for 10 minutes. Then drizzle with liquid honey, sprinkle with nuts, powdered sugar, cinnamon, and berries. Garnish with mint and serve.
