Ingredients
- Ground dried cherries 5 oz
- Red port 2 tablespoons
- White bread 0 oz
- Unsalted peanuts, shelled 0 oz
- Butter 0 oz
- Orange zest 1¼ teaspoons
- Ground Cinnamon ¾ teaspoon
- Ground clove a pinch
- Brown Sugar 2 tablespoons
- Green Apples 8 pieces
- Apple juice with pulp 10 fl oz
Step-by-Step Guide
Step 1
Place the cherries in a bowl, pour the port wine over them, and let them soak for 2-3 hours.
Step 2
Preheat the oven to 355°F. Grease the bottom of a baking dish with a small piece of butter.
Step 3
In a blender, combine the cherries, slightly chopped pistachios, pieces of white bread (without crust), butter, orange zest, cinnamon, cloves, and brown sugar. Blend until it forms a paste.
Step 4
Meanwhile, carefully core each apple without cutting all the way through (to the bottom). Make a shallow horizontal cut around the center of each apple to prevent it from bursting while cooking.
Step 5
Stuff the apples with the filling and place them in the dish. Cover with foil and bake for 40-50 minutes until the apples are tender, occasionally drizzling with apple juice. Serve warm with vanilla ice cream or whipped cream.
