Ingredients

  • Sugar 5 oz
  • Butter 0 oz
  • Milk 15 fl oz
  • Bacon 10 oz
  • Whole egg 14 pieces
  • Cream 10 fl oz

Step-by-Step Guide

Step 1

Set aside two slices of bacon for garnish, and cut the remaining slices into strips. Fry them in butter until the fat layers turn golden brown. Remove from heat and, if necessary, blot the bacon to remove excess oil.

Step 2

Bring the milk and cream to a boil and add the cooked bacon to this mixture. Cover the container with plastic wrap and let the contents cool completely, then strain it through a sieve, discarding the pieces of bacon.

Step 3

Bring the mixture to a boil again, then pour it over the egg yolks that have been beaten with sugar. Heat everything together in a double boiler until it reaches a temperature of 185°F. Strain it again, then place it in an ice bath (a bowl filled with ice) and leave it in the refrigerator overnight.

Step 4

The next day, churn the mixture in an ice cream maker. When serving, garnish the portions with crispy bacon bits.
