
Azerbaijani Qutab with Ramsons and Greens

Description
You can use any greens you like. You can also add cheese. Qutabs can be made with meat or potatoes.
Ingredients
- Wheat Flour 10 oz
- Water 1 cup
- Salt 1 teaspoon
- Ramsons 5 oz
- Parsley 5 oz
- Dill 5 oz
- Green Onion 5 oz
- Cilantro 5 oz
- Vegetable Oil 6 tablespoons
- Unsalted butter 5 oz
- Sumac 0 oz
Step-by-Step Guide
Step 1
Knead a stiff dough from flour, water, and 1/2 teaspoon of salt that should not stick to your hands. Wrap the dough in plastic wrap and let it rest for 30 minutes.
Step 2
Wash the greens, finely chop them, add salt, and mix; they will release some juice.
Step 3
Divide the dough into six equal parts, roll each into a thin flatbread. Place the greens on one half, cover with the other half, and seal the edges with a fork.
Step 4
Fry the qutabs in vegetable oil on both sides (1 tablespoon of vegetable oil per qutab).
Step 5
Brush the hot qutabs with butter and sprinkle with sumac.
