Avocado Soup with Yogurt
Ingredients
- Avocado 8 pieces
- Vegetable Broth 0 qt
- Basil 2 bunches
- Natural Yogurt 0 qt
- Lemon 4 pieces
- Green Onion ½ bunch
- Salt to taste
- Ground Black Pepper to taste
- TABASCO® to taste
- Ice 6 cubes
Step-by-Step Guide
Step 1
Peel the avocados, remove the pit, and chop them roughly. Place them in a blender and drizzle with lemon juice to prevent browning. Remove the basil leaves from the stems and add them to the blender.
Step 2
Finely chop the green onion and add it to the avocado and basil. Pour the yogurt and cold broth (water can be used as a substitute) into the blender, add the ice. Optionally, add TABASCO. Blend the soup until smooth, season with salt and pepper. Chill for 1–2 hours.
