Avocado, Radish, and Basil Soup
Ingredients
- English Cucumbers 1 piece
- Avocados 2 pieces
- Natural fat-free yogurt 5 oz
- Lime Juice 3 tablespoons
- Ground chili pepper 0 oz
- Green onions 0 oz
- Chopped Cilantro (Coriander) 2 tablespoons
- Salt to taste
- Ground Black Pepper to taste
- Olive Oil 1 teaspoon
- Peeled shrimp 5 oz
Step-by-Step Guide
Step 1
In a blender, combine half of the cucumber and 1 avocado with yogurt, lime juice, jalapeño pepper, green onions, 1 tablespoon of cilantro, 1 cup of ice water, 1.5 teaspoons of salt, and 1/4 teaspoon of pepper. Blend until completely smooth. Transfer to a large bowl.
Step 2
Dice the remaining avocado into 0.6 cm cubes. Stir the avocado and remaining cucumber into the soup. Dilute with 1/2 to 1 cup of ice water if desired. Adjust seasoning with salt and pepper. Chill for about 1 hour.
Step 3
In a large skillet, heat the oil over medium heat. Sauté the shrimp, turning once, until opaque, about 2 to 3 minutes. Ladle the soup into bowls; garnish with shrimp and the remaining tablespoon of cilantro.
