Avocado and zucchini cream soup.
Ingredients
- Avocado 2 pieces
- Potato 2 pieces
- Courgette 1 piece
- Salt to taste
- White Pepper (whole) to taste
- Water 2 glasses
Step-by-Step Guide
Step 1
Cook all the vegetables until tender. At the end, add the avocado. If the avocado is ripe, you can remove the soup from the heat right away; if the avocado is unripe, you can simmer it for a little longer.
Step 2
Add salt and pepper.
Step 3
Blend until smooth.
Step 4
When serving, squeeze a little lemon juice into the plates and add a spoonful of sour cream (or Activia yogurt).
Step 5
Alternatively, you can use milk instead of lemon and sour cream.
