Description

It's best to use very ripe avocados (if you bought green and firm ones, let them sit for a week to a week and a half to soften). Add the avocado to the blender last, as the citrus juice will prevent it from darkening. For an even creamier texture, you can freeze the sorbet halfway (right in the blender bowl), blend again, and freeze once more.

Ingredients

  • Avocado 1 piece
  • Sugar 2 tablespoons
  • Bananas 1½ pieces
  • Orange zest 1 piece
  • Meyer Lemon Juice 0 fl oz
  • Orange juice concentrate 15 fl oz
  • Lime Juice 2 pieces

Step-by-Step Guide

Step 1

Note on ingredients: juice of half a medium lemon, juice of half a medium orange, juice of two limes, zest of one lime.

Step 2

Finely chop the lime zest, rub it together with the sugar using your fingertips, and place it in the blender. Add the citrus juice and the peeled and chopped bananas.

Step 3

Peel the avocado, remove the pit, and add it to the blender.

Step 4

Blend everything together until you achieve a thick, homogeneous mixture. Transfer to a tightly sealed food container and freeze lightly, stirring the mixture with a fork every 15 minutes. Depending on the temperature in the freezer, the freezing process will take 1.5 to 2.5 hours.

Step 5

Scoop the frozen mixture into balls using an ice cream scoop dipped in hot water, place them in dessert dishes, and serve as a standalone dish or as an accompaniment to fruit salad or chocolate desserts.
