Description
One of the most important Greek soups, the main ingredients of which are rice, eggs, and lemon juice. It is also one of the few European soups that has a distinctly lemon flavor.
Ingredients
- Chicken Broth 0 qt
- Long-Grain Rice 10 oz
- Chicken Egg 4 pieces
- Meyer Lemon Juice 5 fl oz
- Coarse Salt to taste
- Ground Black Pepper to taste
- Parsley to taste
Step-by-Step Guide
Step 1
Prepare the necessary ingredients.
Step 2
Bring the broth to a boil, reduce the heat to medium, and add the rice.
Step 3
Cook for 20 minutes with the lid slightly ajar.
Step 4
Crack the eggs into a deep bowl.
Step 5
Finely chop the parsley.
Step 6
Stir the eggs until smooth.
Step 7
Stir the raw eggs into the broth with the rice.
Step 8
Add lemon juice and simmer until the soup starts to bubble.
Step 9
Then, mix thoroughly with a slotted spoon and cook for an additional 2 minutes, adding salt and pepper to taste.
Step 10
Garnish with parsley.
