- Butter 2 tablespoons
- Wheat Flour 1 tablespoon
- Meyer Lemon Juice 1 tablespoon
- Sugar 1 teaspoon
- Cream 1 tablespoon
- Whole egg 2 pieces
Step-by-Step Guide
Step 1
Cut the tops off the shoots and sauté them in a small amount of water.
Step 2
Boil the shoots in slightly salted water, strain through a sieve, add butter, the sautéed tops, and bring everything to a boil.
Step 3
For the sauce: mix the cream with the egg yolk, add lemon juice, granulated sugar, and a little salt. Bring to a boil and serve with the soup.
