Asparagus Soup
Ingredients
- Asparagus 15 oz
- Butter 5 oz
- Onion 1 piece
- Potato 1 piece
- Chicken Broth 0 qt
- 10% cream 0 fl oz
- Salt to taste
- Ground Black Pepper to taste
- Meyer Lemon Juice to taste
Step-by-Step Guide
Step 1
Clean the asparagus, cut off the tips and set aside. Cut the remaining parts of the stalks into pieces of 1.5–2 cm.
Step 2
Peel the onion and potato, and cut them into small pieces.
Step 3
Heat 50 g of butter in a pot, add the chopped onion, potato, and asparagus. Cover with a lid and sauté for about 10 minutes.
Step 4
Pour in the broth (1–1.5 liters), bring to a boil, and cook until the vegetables are soft (about 15 minutes).
Step 5
Blend everything with an immersion blender, season with salt and pepper, and add lemon juice to taste.
Step 6
Sauté the reserved asparagus tips in the remaining butter (2–3 minutes).
Step 7
Before serving, add cream and the sautéed asparagus tips to the soup.
Step 8
Serve well with croutons with herb butter (butter mixed with herbs and garlic).
