Asparagus Puree Soup
Ingredients
- Canned White Asparagus 30 oz
- Butter 4 tablespoons
- Wheat Flour 2 tablespoons
- Milk 30 fl oz
- Salt to taste
Step-by-Step Guide
Step 1
Select and clean 20-25 asparagus heads for garnish. Rinse the remaining asparagus, chop it, and boil for 15-20 minutes, adding 2 cups of water and a little salt.
Step 2
In a soup pot, lightly sauté 2 tablespoons of flour with the same amount of butter, dilute with 960 ml of milk, bring to a boil, add the asparagus (along with the cooking liquid), and cook for 10-15 minutes. Then strain through a sieve and add salt to taste.
Step 3
Before serving, drizzle with butter and add the cooked asparagus for garnish. Serve croutons separately.
