Asparagus Cream Soup
Ingredients
- Asparagus 20 oz
- Spanish onions 1 head
- Butter 0 oz
- Chicken Broth 0 qt
- 10% cream 5 fl oz
- Lemon ½ pieces
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Trim the tips off the green asparagus spears; these will be used for garnish. Peel the remaining spears and cut them into one-centimeter segments.
Step 2
Finely chop the onion and sauté it over low heat in a deep skillet with butter until it becomes translucent and soft. Then add the asparagus, cut into segments, and cook, stirring, for about a minute. Pour in the chicken broth, season with salt and pepper, and simmer the soup on the lowest heat for about twenty minutes.
Step 3
At the same time, boil the asparagus tips in salted water. This will take three minutes. Once cooked, cool the tips to prevent them from becoming mushy.
Step 4
Remove the soup from the heat, add cream or sour cream, as well as lemon juice, and blend the soup in a blender.
Step 5
Place the tips of the asparagus in bowls, pour over with green asparagus cream soup, and serve.
