Ingredients
- Onion 1 head
- Olive Oil to taste
- Potato 1 piece
- Chicken Broth 25 fl oz
- Arugula 5 oz
- Goat cheese 5 oz
Step-by-Step Guide
Step 1
Heat some olive oil in a pot and sauté the finely chopped onion until soft.
Step 2
Add the peeled and diced potato and pour in the broth. Bring to a boil, reduce the heat, and cook until the potato is soft. Season with salt and pepper.
Step 3
Add the arugula and cook for another 2 minutes. Slightly cool and blend until smooth.
Step 4
Pour into bowls and add a small amount of goat cheese to each.
