Ingredients

  • Beef 0 lbs
  • Artichoke bottoms 20 pieces
  • Turnips 2 pieces
  • Butter 0 oz
  • Wheat Flour 1 tablespoon
  • Cream ½ cup
  • Egg white 2 pieces
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Boil the broth from the beef and roots.

Step 2

Clean the artichokes, wash them, place them in boiling broth, cook until tender, and strain through a sieve.

Step 3

Fry the flour in ½ tablespoon of butter, dilute with broth, bring to a boil, and mix with the artichoke puree.

Step 4

Dilute the yolks and cream with a cup of broth, pour in while constantly stirring into the remaining broth. Strain and bring to a boil.

Step 5

Serve with croutons.
