Artichoke Cream Soup

Ingredients

  • Butter 5 oz
  • Onion 5 heads
  • Garlic 1 clove
  • Artichoke bottoms 0 lbs
  • 10% cream 10 fl oz
  • Chicken Broth 0 qt
  • Chopped Sage Leaves 6 tablespoons

Step-by-Step Guide

Step 1

Chop the onion and sauté it in butter, then add the minced garlic.

Step 2

Clean the artichokes from tough leaves and chop them, boil in slightly lemony water, then add to the pan with onion and garlic, cover, and sauté for 2–3 minutes.

Step 3

Pour in the broth, bring to a boil, and cook covered until the vegetables are soft. Blend until smooth. Strain through a sieve to remove tough bits of artichoke.

Step 4

Pour back into the pot, heat, season with salt and pepper, and add half of the cream.

Step 5

For garnish, sauté 4 onions in butter.

Step 6

Serve the soup in bowls, sprinkle with sautéed onions, drizzle with cream, and garnish with parsley.
