Ingredients
- Pumpkin 15 oz
- Red Lentils 5 oz
- Sweet Bell Pepper 15 oz
- Onion 1 piece
- Vegetable Broth 0 qt
- Smoked Paprika 1 teaspoon
- Coriander Seeds 1 teaspoon
- Red pepper flakes 2 tablespoons
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Pre-roast the red pepper, peel it, and make a puree.
Step 2
Toast the coriander seeds in a dry skillet and crush them in a mortar.
Step 3
Finely chop the onion. Pour 1 teaspoon of vegetable oil into a pot and sauté the onion until translucent, stirring.
Step 4
Add the diced pumpkin and sauté over medium heat, stirring and adding a little water if necessary, for about 5-7 minutes.
Step 5
Add the lentils, pour in the broth or water, bring to a boil, add the spices, and cook until the lentils are tender, about 15-20 minutes.
Step 6
Add the puree of roasted pepper to the cooked soup and blend everything together with an immersion blender.
Step 7
Season with salt and pepper to taste.
