  • Farm fresh eggs 4 pieces
  • Condensed Milk 10 oz
  • Cinnamon 1 teaspoon
  • Nutmeg a pinch
  • Ginger 0 oz
  • Ground clove 0 oz

Step-by-Step Guide

Step 1

Peel the pumpkin, cut it into pieces, and bake it covered with foil until cooked in the oven at 355°F (about 30–40 minutes). Let it cool and blend it with a blender.

Step 2

Mix the flour with salt and sift it. Grate or chop the chilled butter (it’s better to place it in the freezer for 30–60 minutes the day before) into the flour to make a coarse crumb. The less uniform the crumb, the more the dough will resemble puff pastry. Conversely, the more uniform the mixture, the more the dough will resemble shortcrust pastry in texture.

Step 3

Make a well in the crumb and pour in a little ice water. Gather the dough into a ball. If the dough is too dry, add more ice water. There is no need to knead the dough; it should have lumps of butter, resulting in a dough with pieces of butter. The amount of water depends on the humidity of the flour and may vary. Place the dough in a bag or wrap it in plastic wrap and put it in the freezer for 15 minutes.

Step 4

Roll out the dough, place it in a mold, create edges, and return it to the freezer for 10–15 minutes. Prick the bottom of the dough with a fork (but do not pierce it completely) to prevent it from puffing up. Cover the mold with parchment paper. Fill it with beans, peas, or special ceramic baking balls and bake for 12–15 minutes at 355°F. Remove the weight and bake for another 6–7 minutes.

Step 5

Add one egg at a time to the pumpkin puree, mixing the mixture. Then add cinnamon and other spices to taste, a pinch of salt, and condensed milk.

Step 6

Pour the filling into the pie crust and bake for 60–80 minutes at 340°F. The pie is ready when the filling no longer moves at the sides, but slightly jiggles in the center, and it is not liquid.

Step 7

Allow the pie to cool completely in the mold. The pie may settle slightly as it cools.
