Armenian Borscht
Ingredients
- White Cabbage 0 lbs
- Turnips 2 pieces
- Beetroot 1 piece
- Salad Potatoes 4 pieces
- Orange Bell Peppers 2 pieces
- Passata Tomato Sauce 1½ tablespoons
- Butter 5 oz
- Parsley to taste
- Dill to taste
- Basil to taste
- Cilantro to taste
- Bay leaf 2 pieces
- Paprika to taste
- Ground Black Pepper to taste
- Onion 1 piece
Step-by-Step Guide
Step 1
In a pot, place the butter and sauté the finely chopped onion, adding the tomato paste, 1 cup of water, paprika, and black pepper to taste.
Step 2
Add the finely chopped cabbage, potatoes, bell peppers, as well as the carrots and beetroot, blended until smooth.
Step 3
Pour in enough water to cover the vegetables.
Step 4
Add the chopped herbs, bay leaves, and salt to taste.
Step 5
Cook on low heat with the lid on for 1 hour after boiling.
