Apricots in Caramel with Whipped Cream and Hard Nougat
Ingredients
- Pitted Wild Apricots 5 oz
- Butter 0 oz
- Vanilla salt 1 piece
- Water 5 fl oz
- Brown Sugar 1 teaspoon
- Thyme 12 pieces
- Cream 5 fl oz
- Nougat 0 oz
- Powdered Sugar 0 oz
Step-by-Step Guide
Step 1
Prepare the caramelized apricots. For this, cut fresh or canned fruits into small wedges. Melt the butter in a pan, add the apricots, sprinkle them with a teaspoon of brown sugar, and let them brown for 2 minutes on each side. Leave to cool.
Step 2
Prepare the vanilla syrup. For this, split the vanilla pod lengthwise and scrape out the seeds with a knife. Pour water into a saucepan, gradually add brown sugar (100 grams), add the vanilla pod and its seeds. Increase the heat, add thyme, and let simmer for 10 minutes until thickened. Remove from heat and extract the vanilla pod.
Step 3
Prepare the whipped cream. In a previously chilled bowl, whip the cold cream. Add the powdered sugar and whip again.
Step 4
Finely chop the nougat with a sharp knife. Alternatively, crush it using a rolling pin.
Step 5
Distribute the caramelized apricots into glasses, pour over the vanilla syrup, and add the whipped cream. Garnish with nougat.
