Apricot Puree Soup

Description
Instead of fresh fruit, you can use ready-made canned apricot or peach puree.
Ingredients
- Sugar ½ cup
- Potato protein 1 tablespoon
- Rice ½ cup
- Sour Cream 4 tablespoons
- Water 6 cups
- Pitted Wild Apricots 20 oz
Step-by-Step Guide
Step 1
Wash the ripe apricots and boil them in 6 cups of water, then strain and puree them along with the cooking liquid.
Step 2
Add sugar to the prepared puree, heat it to a boil, and stir in the potato starch that has been dissolved in ½ cup of cold water, bring to a boil, remove from heat, and let cool.
Step 3
Add the cooked rice and sour cream or cream to the cooled fruit puree.
