Step 1

Finely chop the dried apricots, add them to a saucepan along with the butter, and place it on the heat. When the butter has melted, reduce the heat to low and simmer the apricots in the butter for five minutes.

Step 2

Then add vermouth—dry or sweet, depending on your preference—and simmer on the lowest heat for another twenty-five minutes, stirring occasionally. At the end, add honey, mix well, and serve the warm apricots with ice cream.
