Ingredients
- Dried Apricots 5 oz
- Brown Sugar 2 tablespoons
- Egg white 2 pieces
- Honey 1½ tablespoons
- Citrus Zest Mix 1 teaspoon
- Egg white 4 pieces
- Powdered Sugar to taste
Step-by-Step Guide
Step 1
Chop the dried apricots into cubes and place them in a saucepan with 125 ml of cold water, ensuring the fruit is fully submerged. Bring to a boil, reduce the heat, and simmer for 20 minutes until soft. Drain and blend into a puree.
Step 2
Preheat the oven to 390°F. Grease a soufflé dish with butter and lightly sprinkle with half of the brown sugar. In a bowl, combine the egg yolks, honey, lemon zest, and apricot puree, and whisk until smooth.
Step 3
Whip the egg whites to stiff peaks and gradually add the remaining sugar. Fold 1 tablespoon of the egg whites into the apricot mixture and mix well. Gently fold in the remaining egg whites to maintain the airiness of the mixture. Transfer to the dish and smooth the top. Run your finger along the mixture next to the sides of the dish to create a groove, which will help the soufflé rise better.
Step 4
Bake on the highest shelf for 25-30 minutes. Cover with foil if the soufflé starts to brown. Dust with powdered sugar and serve.
