Description

Apricot-Cottage Cheese Pie

Ingredients

  • Wheat Flour 5 oz
  • Chicken Egg 2 pieces
  • Butter 0 oz
  • Cottage cheese 5 oz
  • Sour Cream 1½ spoons
  • Sugar 1½ spoons
  • Starch film 1 tablespoon
  • Vanilla salt 1 tablespoon
  • Canned Peaches 4 pieces
  • Vegetable Oil 1 tablespoon

Step-by-Step Guide

Step 1

Beat the butter with 50 grams of sugar until light and fluffy, then add 1 egg and beat a little more. Add the sifted flour and knead the dough. The dough should be quite firm and feel greasy to the touch. Wrap it in plastic wrap and place it in the freezer for about 15–20 minutes.

Step 2

While the dough cools, prepare the cream: mix the cottage cheese, 1.5 tablespoons of sugar, vanilla sugar, 1 egg, 1.5 tablespoons of sour cream, and 1 tablespoon of starch with a mixer (or electric whisk).

Step 3

Roll out the dough and cut out a circle to match the diameter of the baking dish (I used a dish with a diameter of 20 cm, which is perfect for this amount of ingredients). Place the circle in a greased baking dish, making sure to grease it with vegetable oil beforehand. Use the leftover dough to create edges.

Step 4

Next, pour in the cream and gently submerge the apricots in it (you can use whole halves or cut them — I've tried both ways and they work well).

Step 5

Place in an oven preheated to 355°F for 30 to 40 minutes, and bake until the top of the cream is set.
