Ingredients
- Crushed Vanilla Wafers 10 pieces
- Wheat Flour 5 oz
- Butter 5 oz
- Sugar 5 oz
- Salt to taste
- Farm fresh eggs 3 pieces
- Baking Powder 2 teaspoons
- Pitted Wild Apricots 20 oz
- Chopped almonds 0 oz
- Apricot Jam 5 oz
Step-by-Step Guide
Step 1
Preheat the oven to 355°F.
Step 2
Cream the softened butter with sugar and salt. Beat in the eggs one at a time. Mix the flour, baking powder, and wafers, then add to the main mixture.
Step 3
Grease a baking dish with butter and dust with flour. Pour the batter into the dish.
Step 4
Peel the apricots and remove the pits. Arrange the apricots on top of the batter. Sprinkle the apricots with sugar. Bake the pie for 40 minutes.
Step 5
Allow the pie to cool and remove it from the dish.
Step 6
Chop the almonds and toast them in a dry skillet. Slightly warm the jam and mix it with the almonds.
Step 7
Spread the nut jam over the pie.
