Description

A dessert from a classic cookbook — essentially, it is Russian-style rice pudding.

Ingredients

  • Boiled White Round Rice 5 oz
  • Milk 15 fl oz
  • Sugar 3 spoons
  • Vanilla Pod ½ pieces
  • Apple 2 pieces
  • Lemon ½ pieces
  • Meyer Lemon Juice 1 tablespoon
  • Butter 2 spoons
  • Sour Cream 1 tablespoon
  • Chili jam to taste
  • Salt a pinch

Step-by-Step Guide

Step 1

Bring the milk to a boil and, while stirring, add the rinsed rice. Season with salt and add sugar. Continue to stir, bringing it back to a boil, and then cook over very low heat until the rice is tender. Remove from heat and stir in the vanilla seeds (you can substitute with a few drops of vanilla extract).

Step 2

While the rice is cooking, prepare the apples. Cut them in half, carefully remove the cores, and drizzle with lemon juice. Preheat the oven to 320°F.

Step 3

Spread the rice pudding into a buttered baking dish, smoothing it out, and then spread sour cream on top. Halfway press the apples into the rice, rounded side down, placing a generous piece of butter in the center of each apple. Sprinkle with lemon zest and place in the oven. Bake for an hour, until the apples are softened and golden brown. Serve hot, cut into portions, with a spoonful of cherry jam in each apple.
