
Apples in Honey-Cream Caramel

Description
Choose small apples, you can even use tiny ones — like paradise apples, so you can make a lot of them. A great New Year's dessert that will definitely decorate your table and delight both adults and children.
Ingredients
- Apple 6 pieces
- Cream (40%) 10 fl oz
- Ocean salt ½ teaspoon
- Honey 10 oz
Step-by-Step Guide
Step 1
Line a baking sheet with parchment paper.
Step 2
Insert a stick into each apple, preferably from the stem side.
Step 3
Pour ice water into a large bowl.
Step 4
In a small saucepan, bring the cream and salt to a boil. Immediately add the honey, bring to a boil again, reduce to low heat, and cook for 15-20 minutes until the mixture reaches 255°F (you will need a candy thermometer for this).
Step 5
Then carefully dip the bottom of the saucepan into the prepared ice water (be careful not to let water get into the caramel) to stop the cooking process and cool until the caramel thickens slightly but does not harden. If you cool the caramel too much, return the saucepan to the heat for 10 seconds.
Step 6
Tilt the saucepan with the caramel slightly and dip the apples one by one so that the caramel covers them halfway or completely. Place on the prepared baking sheet and let set.
