Apple Tarte Tatin
Ingredients
- Sugar 10 oz
- Apple 10 pieces
- Cinnamon ¾ tablespoon
- Puff Pastry 1 piece
- Orange juice concentrate 6 tablespoons
- Orange zest 3 tablespoons
- Butter 5 oz
- Vanilla salt 1 teaspoon

Step 1
Peel the apples. Cut them in half and remove the core. If you have frozen pastry, take it out to thaw. If not, stretch the pastry by hand and cut out a circle, then prick the edges with a fork.
Step 2
Pour sugar into a saucepan and start making caramel. When the sugar begins to melt, stir and add orange juice, vanilla, zest, and cinnamon (be careful not to burn the mixture, as it is very hard to clean). Pour the hot caramel into a baking dish and place the apples on top. Once the apples are arranged, cut the butter into small pieces and distribute it among the apples. Cover tightly with the pastry. Place in a preheated oven at 355°F for 40–50 minutes (if you are using a springform pan, place a baking sheet under the rack to catch any dripping caramel).
Step 3
The finished pie should cool slightly. Drain excess caramel and return it to the heat. Quickly flip the pie over. Bring the caramel to a liquid state and pour it over the pie.
