Ingredients

  • Clear Apple Juice 8 pieces
  • Wheat Flour 10 oz
  • Butter 5 oz
  • Raisins 5 oz
  • Nuts 0 oz
  • Sugar 0 oz
  • Chicken Egg 1 piece
  • Whole egg 1 piece
  • Meyer Lemon Juice to taste
  • Vegetable Oil 3 tablespoons
  • Milk 2 tablespoons
  • Ground Breadcrumbs 0 oz
  • Ground Cinnamon a pinch
  • Ocean salt a pinch

Step-by-Step Guide

Step 1

Preheat the oven to 430°F.

Step 2

Sift the flour and make a well in the center.

Step 3

Pour in 1 tablespoon of vegetable oil and 100 ml of warm water, add the egg, a pinch of salt, and knead the dough.

Step 4

Divide the dough into two parts. Add another tablespoon of vegetable oil to one part, combine it with the second part, and knead again.

Step 5

Form a ball, flatten it with your hand, drizzle with the remaining oil. Cover with a bowl and let it rest for 30 minutes.

Step 6

Remove the cores and seeds from the apples, slice them thinly, and drizzle with lemon juice.

Step 7

Chop the almonds with a knife or in a blender.

Step 8

Pour boiling water over the raisins.

Step 9

Dust a large cotton towel with flour and roll out the dough as thinly as possible on it.

Step 10

Spread butter over the dough, sprinkle with breadcrumbs, leaving a 10 cm strip on one edge uncoated.

Step 11

Mix the sugar with the cinnamon.

Step 12

Evenly distribute the apples, raisins, and almonds over the breadcrumbs. Sprinkle with the sugar and cinnamon mixture, and place a few pieces of butter on top.

Beat the yolk with the milk using a fork and brush the strip of dough without filling.

Step 14

Using the towel, roll the strudel into a log shape.

Step 15

Grease a baking sheet with the remaining butter, dust with flour, and place the strudel seam side down on it.

Step 16

Brush the strudel with the yolk and milk mixture and bake for 40 minutes. During baking, brush the strudel with the yolk and milk mixture 2-3 more times.
