Description

Jerusalem Artichoke Syrup: The polysaccharide inulin improves metabolism, supports normal intestinal microflora and its function, and lowers cholesterol levels; pectin and fiber help eliminate toxins and waste from the body. Vitamins C, B1, B2, and PP, along with trace elements such as bioavailable silicon, iron, magnesium, potassium, and others, strengthen joints, bones, and the heart, boosting immunity and overall health. It is prepared at a temperature of 55°C. As I learned from various sources, chefs use Jerusalem artichoke syrup as a sweetener not only in fasting, vegetarian, vegan, and raw food dishes. The syrup contains 70% natural sugars, of which 80% is fructose, 17% is glucose, and 3% is mannose. Nutritional value per 100g: carbohydrates – 69.5g. Energy value per 100g: 267.0 kcal. Does NOT contain GMOs. Sugar-free. No citric acid.

  • Wheat Flour 15 oz
  • Water 5 fl oz
  • Olive Oil 2 spoons
  • Apple Cider Vinegar ½ spoons
  • Salt to taste
  • Apple 4 pieces
  • Raisins 0 oz
  • Walnuts 0 oz
  • Almond 0 oz
  • Jerusalem Artichoke 3 spoons
  • Ground Cinnamon 2 spoons
  • Dried cranberries with sugar 0 oz
  • Bananas 1 piece

Step-by-Step Guide

Step 1

Pour warm boiled water into a container, add salt and apple cider vinegar. Stir well.

Step 2

Start adding the flour and kneading the dough. Gradually incorporate the olive oil while kneading.

Step 3

Knead the dough well until it no longer sticks to your hands. Cover the dough with a bowl and let it rest for 30 minutes.

Step 4

While the dough is resting, prepare the filling. Peel and core the apples, then slice them into thin wedges.

Step 5

Rinse the raisins. Grind or crush the nuts, but not to a flour-like consistency.

Step 6

Mix everything in one bowl, add the sweetener and cinnamon.

Step 7

Let it steep until the dough is ready.

Step 8

Roll the dough out very thinly, brush the inside with olive oil and sweetener, spread the filling evenly, and roll it up. Seal the ends.

Step 9

Place in a preheated oven at 340°F for 15 minutes. Keep an eye on it to prevent the dough from burning. It should turn golden brown.

Step 10

Make the sauce: blend cranberries or strawberries with a banana and sweetener in a blender. Strain through a sieve to remove seeds and skin.

Step 11

Serve warm with sauce. It can also be served with cranberry sorbet.
