Description

  • Ground Cinnamon ¼ spoons
  • Activated Baking Soda 1 tablespoon
  • Grated Ginger Root ¼ spoons
  • Salt ¼ spoons
  • Kefir 5 fl oz
  • Grapeseed Oil 0 fl oz
  • Applesauce 5 oz
  • Egg white 2 pieces
  • Oat flakes 0 oz
  • Muscovado Sugar 0 oz
  • Butter 0 oz
  • Candied fruits 2 spoons

Step-by-Step Guide

Step 1

Lightly grease the baking pan with oil and dust it with flour.

Step 2

In a large bowl, whisk together 215 grams of flour, sugar, baking powder, baking soda, spices, and salt.

Step 3

In another bowl, mix the kefir, applesauce, and vegetable oil. Add this mixture to the flour and stir. There's no need to be overly vigorous: the dough should become more or less homogeneous but still remain fluffy.

Step 4

Gently beat two egg whites and fold them into the batter.

Step 5

Distribute the dough into the molds.

Step 6

Melt the butter and mix it with the oats, muscovado sugar, finely chopped candied ginger, and two tablespoons of flour. Generously sprinkle the mixture over the muffins and press down gently.

Step 7

Bake the muffins at 345°F for about twenty to twenty-five minutes.
