Apple, Raisin, and Cinnamon Pockets

Ingredients

  • Puff Pastry 15 oz
  • Pickled Apples 4 pieces
  • Light Raisins, Seedless 5 oz
  • Sugar to taste
  • Cinnamon 2 teaspoons
  • Butter 1 tablespoon
  • Egg white 2 pieces

Step-by-Step Guide

Step 1

Dice the apples into small cubes and place them in a bowl. Add raisins, sugar (to your liking, but better not to skimp — a quarter cup is definitely good). Sprinkle with cinnamon, mix, and let sit for 10 minutes.

Step 2

Preheat the oven to 430°F.

Step 3

Cut the pastry into 8 squares.

Step 4

Place the filling in the center. Seal two opposite diagonal edges, then seal the other two. Make sure to seal the remaining openings well (the puff pastry may open in the oven, so seal thoroughly!!!).

Step 5

Brush the top with egg yolk.

Step 6

Place on a baking sheet lined with parchment paper and greased with butter.

Step 7

Bake for 15–20 minutes until done. Let cool for about 20 minutes under a towel. Serve.
