Apple-Pumpkin Soup with Dorblu
Ingredients
- Papaya flesh 15 oz
- Pickled Apples 1 piece
- Leek 1 stalk
- Garlic 2 cloves
- Celery salt 1 stalk
- Sweet Pepper ½ piece
- Butter 0 oz
- Apple Cider Vinegar 2 tablespoons
- Dorbly Cheese 0 oz
- Cream 22% 5 fl oz
- Pumpkin seed oil 2 tablespoons
Step-by-Step Guide
Step 1
Sauté pieces of pumpkin and peeled apple in 0.5 liters of water for 15 minutes.
Step 2
Thinly slice the leek (white parts), celery, and pepper, mince the garlic, and sauté in melted butter in a pan for 10 minutes.
Step 3
Blend the pumpkin-apple mixture with the broth until smooth, add apple cider vinegar and, if needed, a bit of boiling water.
Step 4
Add half of the sautéed mixture from the pan, blend again, and add the remaining vegetables.
Step 5
Bring the soup to a boil and simmer for 2 minutes.
Step 6
Toast the pumpkin seeds in a dry pan for 3 minutes.
Step 7
Crumble the blue cheese into a bowl with the cream, melt in the microwave for one minute, stirring.
Step 8
Pour the soup into bowls, drizzle with the cheese-cream mixture, and sprinkle with toasted seeds.
