Description
Apple pirozhki are tender memories of childhood, even if they were never made in your home. They also provide a spacious field for experimentation. Here is a basic, minimalist recipe, but no one will stop you if you want to prepare them differently—perhaps by adding fragrant cinnamon, spicy cloves, lemon zest, or mixing apples with pears, plums, lingonberries, or anything else.
Ingredients
- Wheat Flour 10 oz
- Dry yeast 0 oz
- Milk 5 fl oz
- Butter 0 oz
- Sugar 5 oz
- Chicken Egg 2 pieces
- Apple 10 oz
- Salt a pinch
Step-by-Step Guide
Step 1
Mix the yeast with warm milk and 40 grams of sugar. Let it sit for 10 minutes.
Step 2
Melt the butter and let it cool.
Step 3
Sift the flour, then add the yeast mixture and the egg. Mix well.
Step 4
Add melted butter and salt to the dough. Knead the dough.
Step 5
Cover the dough with plastic wrap and place it in a warm spot for 1.5 hours.
Step 6
Cut the apples into small cubes, removing the seeds.
Step 7
Transfer the apples to a saucepan, sprinkle with 50 grams of sugar (the amount of sugar can be adjusted based on the sweetness of the apples and personal preference), place over low heat, and cook, stirring, for 10–15 minutes. The goal is for the apples to soften slightly but not turn to mush. Allow the cooked apples to cool.
Step 8
Knead the dough on a floured surface, roll it into a sausage shape, and divide it into equal portions.
Step 9
Roll out or flatten the dough by hand into a round shape, place the filling on top, and tightly seal the edges.
Step 10
Transfer the pastries to a baking sheet seam side down, cover with a towel, and let them rise for 15 minutes.
Step 11
Beat the egg with a tablespoon of water and brush the mixture over the pastries. Then, place them in an oven preheated to 355°F for 15–20 minutes.
