Apple-Pineapple Pie

Ingredients

  • Wheat Flour 20 oz
  • Butter 10 oz
  • Sugar 0 oz
  • Farm fresh eggs 2 pieces
  • Whole egg 1 piece
  • Green Apples 5 pieces
  • Canned Pineapple Chunks 1 can
  • Brown Sugar 0 oz
  • Ground Cinnamon 1 tablespoon
  • Vanillin 1 teaspoon

Step-by-Step Guide

Step 1

Dough. In a large bowl, cream together the sugar (white) and butter. Beat in the eggs and 1 yolk. Whip until slightly thickened. Gradually add the flour (watching the consistency, the dough should not be too stiff, as we will shape it by hand) while constantly stirring with a wooden spoon. Knead the dough, form it into a ball, wrap it in plastic wrap, and refrigerate for 45 minutes.

Step 2

Wash the apples, peel and core them, and cut into cubes. In a skillet, melt a bit of butter, add the apples, and sauté until soft and caramelized, then add the pineapple (without juice) and sauté for another couple of minutes. Remove from heat, transfer to a deep bowl, add brown sugar, vanillin, and cinnamon. Mix thoroughly.

Step 3

Take the ball of dough out of the refrigerator, divide it into 2 roughly equal parts. Using your hands, spread one part across the bottom and sides of the baking dish so that when we place our fruit mixture, the dough walls slightly rise.

Step 4

Spread the fruit mixture evenly across the entire diameter of our dough. Preheat the oven to 390°F.

Step 5

Roll out the remaining dough into a flat 'pancake' and cut it into evenly thick strips. Lay them in a lattice pattern over the apples, pinching the edges of the strips to the dough walls.

Step 6

Place in the oven and bake for 45–50 minutes, until the dough turns golden.
