Ingredients

  • Apple 12 pieces
  • Jam 5 oz
  • Sour Cream 1½ cans
  • Sugar 3 tablespoons
  • Chicken Egg 4 pieces
  • Wheat Flour 1 tablespoon

Step-by-Step Guide

Step 1

Peel the apples, removing the cores and skins (E. Smith recommends 6–12). Place them in a pot of boiling water. Blanch them briefly, making sure not to overcook.

Step 2

Remove with a slotted spoon (leaving excess water behind), place in a dish, and let cool.

Step 3

Once cooled, fill the cores with jam (we used apple jam, which was simply wonderful).

Step 4

Meanwhile, prepare the sauce: whip 1.5 cups of sour cream with 4 egg yolks, add a little sugar, and 1 tablespoon of flour.

Step 5

Whip the egg whites until foamy.

Step 6

Gently mix both mixtures and pour over the apples.

Step 7

Bake in the oven for about 15–20 minutes, or until golden brown.
