  • Wheat Flour 1 cup
  • Butter 5 oz
  • Sugar 1 cup
  • Baking Powder 1 teaspoon
  • Chocolate eggs 2 pieces
  • Vanilla salt 2 teaspoons
  • Crabapples 5 pieces
  • Cottage cheese 10 oz
  • Kefir 3 tablespoons

Step-by-Step Guide

Step 1

Preheat the oven to 355°F.

Step 2

First, we will make the dough. Cut the cold butter into small pieces. Rub it together with sugar (2/3 cup), flour (1 cup), and 0.5 teaspoon of baking powder. Add one egg and knead the dough. You may need a bit more flour. The dough should not stick to your hands. From the prepared dough, set aside 1/3 — cover this part with plastic wrap and place it in the freezer. Cover the remaining dough with plastic wrap and put it in the refrigerator. You can use your favorite shortcrust pastry recipe.

Step 3

Prepare the apple filling: wash the apples, cut them in half, and remove the core. Slice them into thin wedges.

Step 4

Prepare the cottage cheese filling. Mash the cottage cheese with a fork until smooth. Add kefir, the remaining egg, the remaining sugar (1/3 cup), vanilla sugar, and the remaining baking powder (1/2 teaspoon). Mix until smooth. The mixture should have the consistency of thick sour cream. It's best to taste the mixture; it should be sweet enough.

Step 5

Take the dough out of the refrigerator and place it in a baking dish lined with greased parchment paper. You can roll the dough out thinly and place it in the dish (don’t forget about the edges). I simply press the dough into the shape, forming the edges. The dough should be very thin.

Step 6

Evenly distribute the apple slices on top. Pour the cottage cheese filling over it. Take the dough out of the freezer and grate it on top using a coarse grater. It may not cover all the cottage cheese.

Step 7

Place in the preheated oven for one hour.
