
Apple Pie with Caramel Pecans

Ingredients
- Wheat Flour 20 oz
- Almond 5 oz
- Sugar 20 oz
- Vegetable Oil 5 fl oz
- Water 15 fl oz
- Apple 0 lbs
- Butter 10 oz
- Powdered Sugar 5 oz
- Chicken Egg 0 oz
- Pecan 5 oz
- Activated Baking Soda 0 oz
- Salt 0 oz
- Baking Powder 0 oz
- Vanilla extract 0 fl oz
- Meyer Lemon Juice 0 fl oz
- Ground Cinnamon a pinch
- Vanilla Ice Cream to taste
Step-by-Step Guide
Step 1
Prepare the shortcrust pastry. Mix 150 grams of all-purpose flour and 50 grams of almond flour. Add 0.5 teaspoon of baking soda, the same amount of salt and baking powder, 200 grams of sugar, lemon juice, and vanilla extract.
Step 2
Pour in 150 ml of water and vegetable oil. Knead the dough until smooth.
Step 3
Prepare the spiced apples. In a saucepan, combine 200 ml of water, 200 grams of sugar, and a pinch of cinnamon. Cook until it reaches a syrup consistency.
Step 4
Slice the apples into thin long slices and dip them in the syrup. Lay the apples overlapping on parchment paper and carefully roll them into a log. Cut in half.
Step 5
Line a baking dish with foil and carefully transfer the dough there.
Step 6
Place the apple rolls on top of the dough. Bake in a preheated oven at 355°F for 20 minutes.
Step 7
Prepare the almond crumble. Mix powdered sugar, 45 grams of almond flour, 50 grams of sugar, a pinch of salt, 375 grams of all-purpose flour, butter, and add 1 egg.
Step 8
Knead the dough and spread it on a baking sheet lined with parchment paper. Bake at 345°F for 15 minutes. Remove from the oven and let cool. Break into large crumbs by hand or using a blender.
Step 9
Next, prepare the caramel pecans. In a heavy-bottomed saucepan, melt 150 grams of sugar and bring it to a caramel state. Add the pecans and stir. Quickly pour onto a silicone mat, let cool, and cut into random pieces.
Step 10
Place the warm apple pie on a plate.
Step 11
Sprinkle the crumble next to it.
Step 12
Top with a scoop of vanilla ice cream.
Step 13
Garnish with caramel pecans and dust with powdered sugar.
Step 14
Serve.
