Apple Pie with Calvados
Ingredients
- Sugar 1 cup
- Ground Cinnamon ½ teaspoon
- Butter 6 tablespoons
- Green Apples 10 lbs
- Vanilla extract ¾ teaspoon
- Calvados 6 tablespoons
- Cream (40%) 0.3 cup
- Wheat Flour to taste
- Whole egg 1 piece
- Shortcrust Cake Mix 20 oz
- Cheshire Cheese to taste
- Cardamom 1 teaspoon
Step-by-Step Guide
Step 1
In a small bowl, mix the sugar, cinnamon, and cardamom.
Step 2
Melt 2 tablespoons of butter in a skillet over medium heat. Peel the apples, remove the cores, and cut each into 8 wedges. Add a third of the apples to the skillet and sauté, stirring, until soft and caramelized, about 8–10 minutes. Remove from heat and carefully pour in 2 tablespoons of Calvados, stir, return to heat, and cook for another 30 seconds. Then stir in 3 tablespoons of cream and cook for another 2–3 minutes until thickened. Transfer to a large bowl. Repeat with the remaining apples.
Step 3
On a floured surface, roll out the dough into a circle slightly larger than the pie dish. Cut a small circle in the center.
Step 4
Place the apples in a large round pie dish and cover with the dough. Press the edges.
Step 5
Preheat the oven to 390°F.
Step 6
Mix the yolk with the remaining cream and brush over the pie. Refrigerate for 30 minutes.
Step 7
Bake for 50–55 minutes until done. If the dough starts to burn, cover the dish with foil. Cool, and optionally sprinkle with cheese on top.
Step 8
Then you can make a few cuts in the dough and sprinkle with sugar and spices, brushing with the remaining egg mixture beforehand. Place under the broiler to caramelize for a few minutes.
