Apple Pie with Apricot Jam on a Cookie Crust
Ingredients
- Antonovka apples 0 lbs
- Cinnamon 1 tablespoon
- Sugar 5 tablespoons
- Water 2 tablespoons
- Vanillin a pinch
- Apricot Jam 4 tablespoons
- Shortbread Cookies 10 oz
- Butter 5 oz
Step-by-Step Guide
Step 1
Preheat the oven to 340°F.
Step 2
Take the butter out of the refrigerator in advance to soften it to room temperature.
Step 3
Crush the cookies into crumbs, add the melted butter, mix thoroughly, and let the cookies soak.
Step 4
Spread the mixture into a baking dish, evenly distribute the cookie crumbs across the bottom and sides using your fingers. Place the dish in the oven for 10 minutes. Then remove and let the crust cool.
Step 5
While the crust is cooling, set aside 4 apples, peel the others, and be sure to remove the cores. Cut the apples into small cubes.
Step 6
Take a pot, mix sugar, cinnamon, and vanillin in it, add the apples, stir everything, and add 2 tablespoons of water. Place on the heat, bring to a boil while stirring constantly. Cook the apple mixture until it thickens slightly and caramelizes. Remove from heat.
Step 7
Peel the remaining 4 apples and remove the cores. Cut 1 apple into cubes and add it to the apple-caramel mixture. Slice the other apples into thin half-rings.
Step 8
Carefully spread the apple-caramel mixture on our crust, distributing it evenly. It should be below the edges of the cookie crust. Arrange the apple slices in a circle on top.

Place our charlotte in the oven for 30 minutes.
Step 10
Remove it; the apples should have a golden hue. Gently spread a layer of apricot jam on top, which will serve as a sort of glaze. It is not necessary to cover the edges of the crust with jam.)
