  • Wheat Flour 1½ glasses
  • Butter 10 oz
  • Clear Apple Juice 7 pieces
  • Sugar 2 spoons
  • Apricot Jam ½ glasses

Step-by-Step Guide

Step 1

In a bowl, rub together the flour and 150 grams of chopped butter until it resembles fine crumbs. Add 3 tablespoons of cold water. Knead the dough. Wrap it in plastic wrap and refrigerate for one hour.

Step 2

Remove the dough from the refrigerator. Dust the work surface with flour and roll out the dough to fit the baking dish (approximately 28 cm in diameter). Place the dough in the dish and trim any excess. Let the dough rest in the dish for another hour.

Step 3

Preheat the oven to 355°F. Peel the apples, cut them in half, and remove the cores. Slice the apples into thin half-moons and arrange them in the pastry shell. Sprinkle with sugar and top with grated remaining butter. Bake until a golden crust forms, about one hour.

Step 4

Meanwhile, heat the apricot jam in a small saucepan until it becomes liquid, and then strain it through a fine sieve.

Step 5

Remove the pie from the oven and let it sit for 5–10 minutes. Transfer it to a plate and brush the top with jam using a pastry brush.

Step 6

Serve completely chilled.
